The Cocktail Club

As the temperature rises, gin is in. Sample our favourite spring cocktails.

West Winds Gin

Sometimes you need a stiff drink to shake off the chill and nothing does that quite as well as a Nuclear Daiquiri. Traditionally using over proof rum we’ve made our own variation utilising The Broadside Navy Strength Gin and Native River Mint.

The Titanic available at the West Winds Gin Bar
45ml The Broadside Navy Strength
30ml Lime Juice
15ml River mint infused Falernum
20ml Green Chartreuse

Method: Measure your ingredients into a boston shaker, fill with ice and shake away for 20-30 seconds. Double strain into a coupette and garnish with a zest of lime.

The Strawberry Gum Clover

Give your guests a taste of Australian mixology.

50ml The West Winds Sabre

20ml Fresh Lemon Juice

10ml Strawberry Gum infused Raspberry Syrup (really fun to make your own!)

10ml Sweet Vermouth

10ml Egg Whites

Add all ingredients into a cocktail shaker. First, we want to dry shake the cocktail. Dry shaking is where you shake a cocktail with egg whites with 1 or 2 cubes of ice in an effort to emulsify the whites. Once that is done we want to open the shaker, fill it up to the top with ice, and shake again. Once you’ve reached a nice dilution, which is usually when the tin is getting frosty, open the shaker, double strain (pop the big springy strainer into the top of the shaker and pour the beverage through a fine strainer, which is sort of like a tea strainer) into a pre-chilled pretty cocktail glass.

Garnish with a Lemon Twist
