Serves 4-6

  • 100 g (3½ oz) haloumi cheese
  • 100 g (3½ oz) fetta cheese
  • 15 cherry tomatoes
  • 2 small red chilli
  • 2 garlic clove, finely slice
  • 6 thyme sprigs
  • 2 oregano sprigs

Melbourne has the largest Greek population outside of Greece and love Greek food! So on a mission we went to find a traditional Greek restaurant selling home style Greek food in Melbourne. We found it. Tsindos Greek Restaurant in the Greek precinct in Melbourne and this is my take on one of the delicious dishes we had,

Greek Baked Cheese

Crumble the homemade haloumi and fetta into a small flat baking dish, making sure the base of the dish is covered with the cheeses. Halve the cherry tomatoes and scatter evenly over the top of the cheese.
Remove the seeds from the chilli and finely chop them. Scatter over the cheese.
Place the sliced garlic and the thyme on top of the cheese and tomato. Remove the oregano leaves from the stalks and scatter over the top. Preheat the oven to 180°C (350°F). Once assembled, bake for approximately 10 minutes, or until the cheese is melted.
Serve with crusty bread, smashed potato or lightly cooked greens of your choice.
